Loaded Pasta Salad

Ingredients
Asparagus
1 cup Pearl Couscous
1 tsp Powder chicken stock
Fennel
Cucumber
Mint
Radish
Feta
Shredded chicken (optional)
Pickled red onion (optional)
Olive Oil
Directions
- Blanch the asparagus. Add the asparagus to a pot of boiling water for 2-3 minutes, then drain and add them to a bowl of ice water.
- Cook the pearl couscous. Bring 1 1/4 cups of water to a boil, then add the chicken stock mix and couscous. Cover with a lid and cook over medium-low heat.
- Chop the veggies as small as you can and crumble the feta.
- Add all the ingredients to a bowl, drizzle olive oil over it, and season with salt and pepper
