Chopped Salad with Wasabi Peas

Ingredients
- Salad
2 handfulls Finely chopped nappa cabbage
2 handfuls Finely chopped kale
1/2 Cucumber, diced small
2 Green onions, finely chopped
Chopped almonds or walnuts
Cilantro, finely chopped
Wasabi peas
- Dressing
1/3 cup Avocado oil (can swap for olive)
1/6 cup Apple cider vinegar
1/6 cup Cup water
1 tsp Sesame oil
1 tsp Sugar
1/2 tsp Salt
Freshly ground pepper
1 tsp Grated ginger
1 clove Grated garlic
1 Shallot, finely chopped
1 Lime, zest and juice
Directions
- Salad
- Massage your finely chopped kale with a bit of salt (just scrunch it with your hands). Add the kale and all other chopped veggies and nuts into a bowl.
- Dressing
- Put all ingredients into a mason jar and shake.
- Assemble
- Add the dressing on top of the salad, toss, and top with a generous handful of wasabi peas.
