Golden Hour Salad

I made this salad because I had just ordered pizza and wanted something bright and crunchy to eat with it. Dare I say, I don’t want to eat pizza without this salad now.

Ingredients

  • Red cabbage

  • 1 medium 1 Carrot

  • 2 2 Oranges, segmented

  • Cilantro

  • Vinaigrette
  • Orange juice from orange

  • 1/8 cup 1/8 Vinegar (I used Acid League Rare Citrus Vinegar, but you can use apple cider vinegar instead!)

  • 1/4 cup 1/4 Olive oil

  • 1/2 tsp 1/2 Coriander, ground

  • Salt

  • Pepper

Directions

  • Cut your veggies. I like to use a mandolin for the cabbage and the carrots, but if you don’t have one, just try to slice them as thin as possible. *Refer to the note for a carrot tip. Chop the cilantro very finely and add all the veggies and orange into a large bowl.
  • Assemble the dressing by adding everything to a bowl and mixing. I like to add it to a mason jar with a lid and shake it vigorously.
  • Add vinaigrette to the vegetables and toss to coat.

Notes

  • if you do not have a mandolin, use a peeler to thinly shave the carrots! You especially want the carrots really thin in this, or else it is a bit tough to eat.
