I made this salad because I had just ordered pizza and wanted something bright and crunchy to eat with it. Dare I say, I don’t want to eat pizza without this salad now.
Golden Hour Salad

Ingredients
Red cabbage
1 medium Carrot
2 Oranges, segmented
Cilantro
- Vinaigrette
Orange juice from orange
1/8 cup Vinegar (I used Acid League Rare Citrus Vinegar, but you can use apple cider vinegar instead!)
1/4 cup Olive oil
1/2 tsp Coriander, ground
Salt
Pepper
Directions
- Cut your veggies. I like to use a mandolin for the cabbage and the carrots, but if you don’t have one, just try to slice them as thin as possible. *Refer to the note for a carrot tip. Chop the cilantro very finely and add all the veggies and orange into a large bowl.
- Assemble the dressing by adding everything to a bowl and mixing. I like to add it to a mason jar with a lid and shake it vigorously.
- Add vinaigrette to the vegetables and toss to coat.

Notes
- if you do not have a mandolin, use a peeler to thinly shave the carrots! You especially want the carrots really thin in this, or else it is a bit tough to eat.
