Ingredients
1 small container Cherry tomatoes
1/2 cup Thick plain yogurt
1-2 cloves Garlic
Za’atar
1 handful Arugula
1-2 Pitas
Olive oil
Directions
- Add cherry tomatoes, a splash of water, and a pinch of salt to a pan over medium-low heat. Cover and let them stew down.
- Grate the garlic and add it to the yogurt, along with salt, pepper, and za’atar. I would start with maybe 1/2 tsp of za’atar and increase it from there to your liking! Personally, I like a lot, but it is better to start with less! Mix everything together.
- Check on your tomatoes and squish them down to help them break apart.
- Add the yogurt mixture to a bowl, top it with arugula, and then add the tomatoes. Drizzle olive oil on top and serve with pita.
