  • 1 small container Cherry tomatoes

  • 1/2 cup Thick plain yogurt

  • 1-2 cloves Garlic

  • Za’atar

  • 1 handful Arugula

  • 1-2 Pitas

  • Olive oil

  • Add cherry tomatoes, a splash of water, and a pinch of salt to a pan over medium-low heat. Cover and let them stew down.
  • Grate the garlic and add it to the yogurt, along with salt, pepper, and za’atar. I would start with maybe 1/2 tsp of za’atar and increase it from there to your liking! Personally, I like a lot, but it is better to start with less! Mix everything together.
  • Check on your tomatoes and squish them down to help them break apart.
  • Add the yogurt mixture to a bowl, top it with arugula, and then add the tomatoes. Drizzle olive oil on top and serve with pita.

I randomly made this when I did not have much in the fridge and it has quickly become my go to lazy weekday dinner
