S’mores with Homemade Salty Vanilla Bean Marshmallows

Ingredients
1 cup water
3 envelopes unflavored gelatin (21g)
2 cups granulated sugar
1/2 cup corn syrup
1 1/2 tsp salt
1/2 vanilla bean (or 2 tbsp vanilla extract)
icing sugar
chocolate (cadbury dairy milk made for s’mores)
graham crackers
Directions
- Grease a 9×9 baking dish. Set aside.
- Add 1/2 cup of water and gelatin to the bowl of an electric mixer. Set aside.
- In a saucepan, combine the remaining 1/2 cup water, sugar, corn syrup, salt, and scraped-out vanilla bean.
- Bring to a boil, boil for 1 minute, then remove from heat.
- Turn the mixer on low, and very carefully pour the hot sugar mixture into the gelatin. Mix on high speed for approximately 10 minutes, until tripled in volume, thick, and white.
- Transfer the mixture to the prepared baking dish. Grease a piece of plastic wrap and place it on top of the marshmallow. Press down lightly so it is in full contact.
- Let set overnight.
- Remove the marshmallow from the dish and cut it into squares, using the chocolate as a size guide.
- Place a graham cracker square, followed by chocolate. Using a kitchen torch, warm the chocolate until it just starts to melt. Add marshmallow and torch until golden.
- Top with flaky salt and serve immediately
