I LOVE THIS SALAD

I am a firm believer that salads should not follow a strict recipe. I outlined some approximate amounts but please adjust ratios of ingredients to your preferences!

Ingredients

  • 1 cantaloupe, skin and seeds removed

  • 1 large watermelon radish (or 2-3 small ones)

  • 1 handful Radishes

  • 1 small bulb of fennel

  • a handful mint, leaves picked from stem

  • 4 mini cucumbers

  • olive oil

  • apple cider vinegar

  • 1 Cup Plain yogurt

  • 2 cloves garlic, grated

  • 1 Tbsp ground sumac

  • 1 Tbsp lemon juice

  • salt and pepper

Directions

  • Using a mandolin, very thinly slice the radish and fennel. Sprinkle with salt.
  • Smash the cucumbers lightly with the side of a knife, cut into large-ish irregular sizes chunks. Cut the cantaloupe to similar size cubes as the cucumber.
  • For the yogurt dressing, combine the yogurt, garlic, sumac, lemon juice, and a good drizzle of olive oil. Season with salt and pepper to your liking
  • To assemble, spoon half the yogurt dressing on the bottom of the plate. Add the fruit and vegetables, drizzle with olive oil, a bit of apple cider vinegar, and sprinkle with salt. Top with dollops of the remaining yogurt mixture.

  1. love this recipe! I couldn’t find watermelon radish or sumac at my local grocery store so I just added more regular radishes and added lime zest to the dressing instead of the sumac and it turned out great!
