Ingredients

  • 4 Cups 4 Rolled Oats (not instant)

  • 1 Cup 1 Nuts (I use almonds or walnuts)

  • 1/2 Cup 1/2 Seeds (I use pepitas

  • 1/2 Cup 1/2 Coconut Oil

  • 1/2 Cup 1/2 Honey or maple syrup

  • 1 Tsp 1 Vanilla extract

  • 1 Pinch 1 Salt

  • 1 Cup 1 Dried fruit

Directions

  • Pre heat the oven to 350 F.
  • Add the oats, nuts, seeds and salt to a large bowl. Toss to combine.
  • Add the coconut oil, followed by the honey and vanilla. Mix well until everything is well coated.

    *if you measure out the coconut oil first then the honey slides right out the measuring cup instead of sticking to it!
  • Transfer to a lined baking sheet. Spread into an even layer and pat the mixture down.
  • Bake for 12 minutes. Remove, stir the granola, and then pat down again. Bake for another 12-15 minutes until golden.
  • Remove from the oven and DO NOT TOSS! Let cool for at least 30 minutes before breaking apart. This is the key for clumpy granola. Once cooled, add the chopped dried fruit and break apart the granola.
