Let me start by saying I am not a huge matcha person. I enjoy a good matcha latte every now and then, but I rarely will have a matcha dessert. That being said, this matcha tiramisu is next amazing. I took a gamble serving this at a dinner party, I had never made or tried it, but it turned out perfect and everyone could not stop talking about it!
If you are a firm matcha hater, or are craving the classic. Simply dip the ladyfingers in espresso instead of matcha, and dust with cocoa instead!
Matcha Tiramisu

Ingredients
4 large egg yolks
1/2 cup granulated sugar
3/4 cup whipping cream
1 cup mascarpone
1 tsp vanilla extract
1 1/2 tbsp matcha powder, plus more for dusting
24 ladyfingers
Directions
- Add the egg yolks and HALF the sugar (1/4 cup) to a double boiler. Make sure the water underneath is just barely simmering and not touching the bowl above. Gently cook, whipping constantly for a few minutes.
- Remove from heat and whip with a hand mixer on high until the mixture increases in volume and becomes a pale yellow. Set aside.
- Clean the mixer, and whip the cream and remaining 1/4 cup of sugar until soft peaks form. Then add in the mascarpone and vanilla, whip again to medium peaks.
- Fold in the sweetened egg yolk mixture.
- Prepare the matcha: sift the powder into a bowl and add 1/2 cup water at 175°F, not boiling. Whisk until there are no lumps then transfer to a shallow small dish.
- Assemble: Dust an 8×8 baking dish with matcha powder. Very quickly dip the ladyfingers into the matcha and then place into the baking dish. Repeat until you have covered the whole bottom.
- Spread half the mascarpone mixture over the ladyfingers. Then create a second layer of dipped ladyfingers and top with remaining mascarpone mixture.
- Cover and chill, ideally overnight but an absolute minimum of 4 hours.
- Dust with more matcha just before serving.
