A family recipe that a follower of mine shared with me last year! I have tried a few different ones but always had the most success with this one. Thank you Ashley!!!

Ingredients

  • 2/3 cup flour

  • 1 1/3 cup milk

  • 2 eggs

  • 1 tsp kosher salt

  • neutral oil

Directions

  • Combine the flour, milk, and eggs into a smooth mixture, then transfer it to the fridge. Do this at least 30 minutes before cooking. Ideally, prepare the batter the night before, but even making it the morning of or a few hours ahead is beneficial.
  • Preheat the oven to 450°F. Add 1 teaspoon of oil to the bottom of each muffin tin and place the tin in the oven until the oil is very hot, about 10 minutes.
  • Remove the muffin tray from the oven and quickly pour 1/4 cup of cold batter into each tin. Immediately return the tray to the oven and bake for 10–15 minutes at 450°F. Then, reduce the temperature to 275°F and bake for an additional 20 minutes.
